Bird on a Wire Chardonnay is handpicked from P58 clone vines grown in red volcanic soils at Gladysdale in the Upper Yarra Valley.
The fruit is whole bunch pressed. The juice undergoes wild yeast fermentation and partial malolactic fermentation in French oak barrels, around one quarter new. Fining is used for light clarification in some vintages.
Deep yellow, Bird on a Wire Chardonnay has zesty citrus flavours, subtle stone fruit and a good balance of depth and acidity. Cellaring potential is five years.
